Quick and Dirty Homemade Mac and Cheese
(serves 3-4)
This is a family recipe, for a really fast and easy, unconventional, macaroni and cheese. It’s great for a quick dinner and very filling and satisfying.

4 Quart Pasta or Soup Pot
Colander
Large Spoon
Ingredients
- 16 oz package of large pasta shells
- 12 oz can of low fat 2% evaporated milk
- 8 oz of grated cheddar or colby jack cheese
- 12 oz package of Polska Kielbasa
- Salt and Pepper
Lets get Cooking
Fill pasta pot with water and bring to a boil.
Slice Kielbasa into small chunks or 1/2 inch slices, sliced again in half.
Cook shells as instructed on the package adding in all of the sliced Kielbasa to the boiling water as well.
When it’s finished cooking, drain the pasta and Kielbasa, immediately returning them to the hot pot and reduce the temperature to low heat.
Add in the can of 2% evaporated milk and stir.
Add in the cheese by the handful stirring vigorously after each time (you don’t want the cheese to get clumped up).
Turn off the heat and let the whole thing sit for a minute or two to set up.
Add Salt and Pepper to taste.
Smile, serve and eat.
Tips and Suggestions
Try adding a few dashes of your favorite Hot Sauce to kick it up a bit.
I like to put a lot of Fresh Ground pepper in it to contrast the starchy cheese flavor.
Add Fresh Broccoli, Spinach, or Green Beans to the boiling water the same time you add the Kielbasa for a one pot meal.
As to any dish, a handful of Bacon Crumbles will turn it into magic.
