For tonight’s Night Owl I am going to show you one of my favorite cooking youtube channels. If you like Thai (and Asian) foods you will enjoy this. And even if you don’t she will show you some cool stuff about Thailand.

I’ve cooked Chicken Adobo, not her recipe, but pretty close. I got the recipe from my neighbor who is married to a Filipino so her mother-in-law made sure she knows the ropes. Lol.

It is a super easy and relatively quick one and has only a few ingredients: Bone-in chicken thighs, soy sauce, vinegar, little bit of sugar, and black pepper. She adds an extra step of sautéing onions and garlic instead of adding sugar.

Definitely goes with rice. I tend to not reduce, but go so far as to double/triple the liquids for the extra juice for the rice. I haven’t tried it with the onions and garlic yet. But I will next time I cook it.
